Foodie Friday: Fiesta Turkey Skillet

Fiesta Turkey Skillet

Makes 4 Servings

INGREDIENTS

  • 1 lb ground turkey
  • 2 cups grain of your choice, cooked
  • 1 cup black beans, cooked
  • 1 cup corn, cooked
  • 1/2 cup red onion, chopped
  • 1/2 cup bell pepper, chopped
  • 1/2 cup mushrooms, chopped
  • 1 TBSP oil of your choice
  • 2 cups fresh salsa
  • 1 tsp ground cumin
  • 1/2 cup cilantro, chopped

DIRECTIONS

  1. If not already, cook the grain of your choice.
  2. Add onions, peppers, and mushrooms to a skillet with 1 TBSP of oil of your choice.
  3. Once vegetables are softened, add the ground turkey & cook thoroughly.
  4. Stir beans, corn, cilantro, & cumin into the skillet and heat thoroughly.
  5. Mix in the cooked grain and serve topped with salsa.
